Have you heard the rumor? The moon is made of cheese?
Sadly, there’s no cheese in LUNE. We haven’t gone that crazy (yet). Instead, we infused this rich and sweet Imperial Stout with something a bit more down-to-earth: vanilla beans and cocoa nibs. To create the bold body and lush viscosity this style is known for, we extended the boil well beyond the usual hour—over seven hours, to be exact.
And while we’re no strangers to wild adjunct combinations, with LUNE we aimed for simplicity. But simple doesn’t mean boring! Instead of the classic Madagascar Bourbon vanilla, we reached for lesser-known varieties with unique aromatic profiles: Mexican Veracruz, Uganda Black Ebony and Lake Victoria Brown. Alongside the beloved vanilla smoothness, these varieties bring notes of chocolate, caramel, figs, strawberries, and plums, with subtle hints of cashew, tobacco, and gentle smokiness.
Together with cocoa nibs and the chocolate malt in the grain bill, these vanillas create a beautifully smooth, layered, and balanced flavor.
